Lunch today was Carrot Basil Salad. It has become my summer "go-to" recipe when I am short on time and awaiting the arrival of another box of of
Abundant Harvest organic produce. :) It's so fun and easy to make...
Ingredients:
Carrots
Basil (from the
backyard!)
Peel the carrots with a veggie peeler. Garnish with basil... and you're finished!
Usually I will also add sunflower seeds or cashews, for protein. :)
Oh... and balsamic vinegar makes a delicious quick dressing!!
