Sweet Treats for Valentine's Day

Hello there, wellness lovers!

Well... as you know, Valentine's Day is quickly approaching... and I thought I'd share a few fun recipes for sweet treats that I've had saved on Pinterest for ages now!

Hopefully these are some new recipes that you haven't seen before! I think every single one would be perfectly appropriate for Valentine's Day. I hope you enjoy!

Raw PB and J Popsicles

Well, hello there wellness lovers!

The other day, I was browsing the reading list of my favorite blogs, and practically melted when I came across a recipe for Raw PB & J Popsicles by Amy from Fragrant Vanilla Cake!


Ever since finding popsicle molds at TJ Max at the beginning of summer, I've been having all sorts of fun creating my own 'ice cream' pops by freezing leftover banana soft serve...

But I had definitely not thought to make peanut butter and jelly-inspired pops!

Here it is!

Raw PB & J Popsicles
Makes 6

Jelly:
1 cup raspberries
4 large medjool dates
1 tsp pure vanilla extract

PB ice cream:
5 large frozen bananas
1/2 cup raw peanut butter
1 tsp pure vanilla extract
stevia to taste

6 standard sized popsicle molds

To make the jelly, combine all ingredients in a food processor and process until smooth. Set aside. To make the PB ice cream, combine all ingredients in a high speed blender and puree until smooth, using the tamper to press it down into the blades. Pour into a bowl.

To assemble, take 6 popsicle molds, and alternate peanut butter ice cream and jelly until you have them filled (I used a spoon to carefully spoon the fillings in). Freeze overnight, then remove from the molds (you may need to run warm water over them for about 30 seconds to loosen) and enjoy!

Memorial Day Ice Cream Treat!

Greetings wellness lovers!

Today I was hoping to inspire you with a refreshing Memorial Day treat! It's sweet, creamy, cooling... and of course healthy! It boasts 14+ grams of fiber per serving, is high in potassium, very high in omega-3 fatty acids as well as protein, and is completely free of added sugar!

Memorial Day Banana Soft Serve













Ingredients:

  • 1 large banana, frozen in halves
  • 3 tablespoons milk of your choice (I used coconut.)
  • 2 tablespoons chia seeds
  • dash of stevia, powdered or liquid (I used NuNaturals vanilla.)
  • strawberries + blueberries, for patriotic color!

Directions:
Blend frozen banana halves and milk in a food processor. Add in chia seeds and stevia, Transfer to a bowl, and garnish with fruit! Simple. (Makes 1 large serving or 2 smaller.)

In terms of Ayurveda...
According to the 5,000+ year old ancient natural healing system of Ayurveda, this is an excellent balancing food for individuals of the 'Pitta' body type... or, in modern terms: people who tend to be competitive, driven, sometimes hot + fiery, type A people.

Improve your Digestion with Raw Food!

Hello nutrition-minded foodies and wellness lovers! 

Today I have invited raw foods enthusiast Daisy Hernandez from the Wellness {Pulse} to share her knowledge and expertise about the benefits of raw foods for digestion! She also has an excellent recipe for a zucchini dill spread, made entirely with ingredients that are beneficial for improving digestion! 




Almost everyone has heard of the raw foods diet by now, and I have a feeling that many of you have actually experimented with the living foods lifestyle in one way or another.

While it's highly debatable and individual as to what percentage of your diet needs to be raw to enjoy the many benefits of living foods, I am 99.9% sure that there isn't a single intelligent person who would disagree that adding more fruits, vegetables, nuts, and seeds (provided you are not allergic), would have anything but a positive effect on your overall health and wellness!

"When I hear the word raw I immediately picture an image that hasn't been retouched or enhanced, it's in its purest form - just how you shot it. The same rings true to what we eat, the less 'enhancements' we do to our foods - the more natural goodness we’ll be putting into our body.

Eating raw foods is the most natural form of eating and how our ancestors back in their cavemen years used to eat. Back then, there weren't any stoves, microwaves or toaster ovens. It was all raw. It wasn’t until we began introducing unnatural foods into our lives that we started to come across epidemics such as diabetes, cancer and chronic digestive issues.

As of now, over 8% of the population in the United States is suffering from a digestive disorder and in Canada close to 20 million a year. Supplements and other products are shelved in grocery and health food store aisles carrying an extreme amount of sugar and other things I can’t even pronounce that can have our system working overtime and clogging things up anyway.

The problem with digestion is that when it's not running properly, not only do we begin to notice other issues such as constant headaches, acne, low energy, but we also feel uncomfortable. The food we've ingested from over 24 hours ago hasn't passed, our system is lagging. Just think of a rundown car struggling to start up, can you hear its drowning sound?

There are 3 types of enzymes that get our motor running in our overall digestion:

  • digestive enzymes
  • metabolic enzymes
  • food enzymes
By eating  more raw-inspired goodness, we begin to bring in more active enzymes into our bodies that help digest and absorb nutrients into our cells.  The food enzymes are the ones that start the food digestion and guess where they can be sourced? Raw fruits and vegetables!

By heating our food to over 110 degrees we begin to kill off these enzymes and the nourishment we are looking to bring into our body is much less.

All raw foods are rich in enzymes, however, sprouted seeds, grains and legumes have the powerful punch. Sprouting can be done by soaking these foods, once they being to sprout their enzyme content has increased substantially.

For our digestion, it’s important to figure out what the problem is. If it’s bloating, sprouting of black, kidney or garbanzo beans could make matters worse. Start small then increase to see how you feel. What's most important it's to listen to your body, it knows what it needs.

I love incorporating raw foods into my day-to-day but I don't go extreme, I like to cook with whole foods as a way to balance things out for myself. Remember, what works for one person may not work for another. This way of eating works for me!"

Recipe: Zucchini Dill Spread

Ingredients:
2 cups zucchini, chopped
1/4 cup dill, chopped
1 garlic clove
2 tbs tahini
2 tbs lemon juice
sea salt, to taste

Directions:
Place all ingredients into food processor and pulse until smooth.
Add sea salt to taste.
Serve as a dip or spread to make a wrap.

Coconut Oil Fudge + Health Coach Ornament!

Greetings! And happy holidays! :)

Today I wanted to share a delicious recipe for a healthier version of a classic holiday treat!

Coconut Oil Fudge!
















Instead of the usual butter, milk, and sugar-- this recipe uses coconut oil, cocoa powder and honey/agave/maple syrup.

Recipe:
(Makes: 16 servings)

Ingredients:
1/2 cup coconut oil
1/2 cup agave
1 tsp. vanilla extract 
1/2 cup cocoa powder

Directions:
1. Using a spoon, blend the melted coconut oil with agave and mix well. Add vanilla extract, if desired. Stir in the cocoa. Mix until smooth.

2. Pour into an 8 x 8 " pan and refrigerate until firm, about 20 minutes.

3. Cut into 16 pieces and keep cool. Enjoy!!

*Because of the nature of the coconut oil, the fudge must be kept cool.

*Yesterday I received the most adorable xmas ornament from one of my amazing health coaching clients! It really made me stop and reflect on how much I love my job.

Massaged Kale Salad!

Greetings health and wellness lovers!

Can you believe it's almost 2012?! I can't...

Anyways, this weekend I made a (festive?) delicious recipe from the Integrative Nutrition Healthy Holiday Guide!

Massaged Kale Salad


















I made the salad to bring to a family gathering...

Honestly, I was a little hesitant to bring it, because kale is (unfortunately) not a commonly-enjoyed leafy vegetable by people outside of the foodie/nutrition/wellness circles.

But I decided to bring it anyways... and it seemed to be a hit! A family member even wanted the recipe! In addition to the Integrative Nutrition Holiday eBook, the recipe is also featured on Lemons and Loafers.

The only change I made to the recipe was substituting raisins + pomegranate seeds for the dried cranberries (because I didn't have any).

Peppermint Dessert Freeze

Greetings!

Today I wanted to share with you a favorite new treat! It is perfect for this most wonderful time of year! And, it can be enjoyed by everyone! It's dairy-free, soy-free, and gluten-free.
















Peppermint Dessert Freeze
(makes about 4 small servings)

Ingredients:
1. 2 frozen bananas (in halves)
2. 1.5 cups almond milk
3. 1 cup ice
4. 1/2 teaspoon peppermint extract (natural)
5. 4 tablespoons chocolate chips + more for garnish, optional

Directions:
Blend frozen bananas, almond milk, ice, until smooth. Add 4 tablespoons of chocolate chips (I used dairy-free). Blend on low, just enough to break the chips into smaller pieces. Serve in adorable glasses.. and garnish with additional chocolate chips if desired.
















Disclaimer: I am not saying that chocolate chips are healthy. I live by the 90/10 % diet. 90% percent of the time I eat amazingly healthy. 10% of the time I eat chocolate... well maybe only 2%. ;) Learning about the importance of not depriving yourself in my studies this year at Integrative Nutrition this past year has inspired me to start enjoying (organic, dairy-free) chocolate more!

And... I am honored to have my Pumpkin Pie Smoothie recipe published in it!

Pumpkin Pie Smoothie
(serves 1)

Ingredients:
  • 1/2 c. pumpkin
  • 3/4 c. almond milk
  • 2 dates, pitted
  • 1/2 banana, frozen
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/2 cup ice
  • 1 tsp. vanilla
  • optional: candied pecans
Directions:
Add all ingredients in a blender. (I use a Vitamix.) Blend until smooth.

The Last Mango Lassi

This weekend was (hopefully) the last of the warm summer temperatures. I am so ready for fall, and everything it brings! Rain, cool weather, pumpkin spice latttes, leaves, candles, pumpkins galore, jacuzzi nights, soaks in the tub, scarves, boots, jackets, cozy nights by the fireplace... 

Tonight I decided to have my last mango lassi of the season. My friend Amber introduced me to them this summer. They are normally made with yogurt, mango, and sugar. However, we made them with coconut milk instead, and I leave out the sugar. As you know, I am greatly a fan of healthy (and simple) recipes.

The Last Mango Lassi








 






To Make:
(1 serving)

Ingredients:
  • 1 cup frozen mango chunks
  • 3/4 cup coconut milk
  • 1/2 cup ice
Directions:
Blend ingredients in a blender. *If not using a Vitamix, make sure to select the 'ice' setting, if available, to blend the ice and frozen mango well.

Fall Recipe: Pumpkin Pie Smoothie!

I don't know about you... but I am ready for fall! The last week of August is a great time to begin enjoying pumpkin smoothies, right? ;)

Every August, I always have to remind myself that it is not fall, yet.... even though Michael's has had the fall decor out for a month! Yesterday I went to my favorite store, and learned that they are already selling Christmas decor!

Crazy...

Anyways, I just learned about a fall recipe contest that my beloved nutrition school, Integrative Nutrition is having!

25 entries will be selected to publish in their fall recipe ebook! This summer, my Tropical Mango Banana Sherbert was featured on the Integrative Nutrition blog! Naturally, I am excited at the chance to submit a fall recipe!

Experimental recipe #1... Pumpkin Pie Smoothie!









Ingredients:
  • 1/2 c. pumpkin
  • 3/4 c. almond milk
  • 2 dates, pitted
  • 1/2 banana, frozen
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/2 cup ice
  • 1 tsp. vanilla
  • optional: candied pecans
Directions:
Add all ingredients in a blender. Blend until smooth. Garnish with candied pecans, if desired. Simple!

Basil Pine Nut Pesto!


Summer= gardening, and gardening= fresh basil!

Today the basil plant was practically begging to be turned into pesto! I decided to get creative and start tossing ingredients into the food processor. It turned out delicious! (and it's dairy-free!)

Ingredients:
  • 1/3 cup nutritional yeast
  • 1/3 cup pine nuts
  • 1/3 cup olive oil
  • 2 cups basil, packed
  • salt (to taste)
Directions:

Combine nutritional yeast and pine nut in a food processor, until mixture becomes a powdered consistency. Add olive oil, basil... blend again. Lastly, add 1/2 teaspoon of salt, blend. Taste pesto, add a pinch more salt, if desired.

(makes about 1 1/3 cups)

*Life Update*

Lately I've been beyond crazy busy... it's been exciting, yet challenging... working 10-hour days at my 'day job', squeezing in time to dedicate to my business at 5 am and 8 pm, seeing clients on the weekends, trying to spend quality time with Jon, family, and friends, and still trying to get 8 hours of sleep! But... I am so excited because I feel like my health coaching career is taking off! Next month, I am excited to be presenting my first seminar, "Sugar Blues," at the local Y. Also, I will be attending my first Integrative Nutrition conference in New York City

Back in May, I met the director of the school, Joshua Rosenthal for the first time, as well as fellow students... and it was an amazing experience! I had finally met 'my peeps!' (like-minded in the area of nutrition) Naturally, I can't wait to meet up with everyone (and meet many new students/graduates!) again! New York City... here I come!!! If you are a fellow IN student, and planning on attending "Fall INNto Action"... let me know! I would love to connect! :)

Apricot Creamsicle!

I hope you are enjoying your Memorial Day weekend! I know we are!   ♥  It's so nice to relax on a 'staycation.' :)

Anyways, we've been getting lots of apricots in our weekly Abundant Harvest Organics box of local, seasonal, & organic produce!


Last night, I was inspired to make this...




















Apricot Creamsicle Smoothie!















Jon: "It doesn't really have cream, does it?"
Me: "Nope!" ;)

Ingredients:
  • 1 cup apricots, frozen (in halves)
  • 1 banana, frozen (in halves)
  • 1/2 teaspoon vanilla
  • 1 1/3 cups almond milk
  • optional: whipped cream (I used dairy/soy-free Rice Whip!) 

Directions:
 Blend! :)

(serves 2)

    Clementine Banana Soft Serve!

    Greetings! I hope this Wednesday finds you well & having a great week!

    This week, Integrative Nutrition has informed my class that we are ready to begin seeing clients!! I've been crazy busy lately with finalizing my business cards, website, business license, etc. But I am loving it! I've never been more excited about anything in my life! (except when I met Jon ♥) More than anything... I want to be an entrepreneur and improve the health & happiness of people everywhere!

    Anyways, on to the recipe for Clementine Banana Soft Serve! 

    The other day... I was craving ice cream. This seems to be a common craving when the weather warms up. So I whipped up an easy, healthy, & refreshing treat! It was so delightful, I just had to share!
















    Clementine Banana Soft Serve

    Ingredients:
    • 1 banana, frozen (in halves)
    • 1 clementine, frozen
    • 1 tsp. vanilla
    • strawberries (optional)
    • 1 tablespoon carob chips (optional)

    Directions: 

    Place banana and clementine in food processor, add vanilla. Blend until mixture has a 'soft serve' consistency.

    *note: If mixture is not becoming creamy, add a dash of liquid, such as almond milk or water. Garnish with sliced strawberries and carob chips! ♥

    What are the Benefits of Carob?
    • Carob contains vitamins A, B, B1, B2, B3, B6, D; calcium; iron; potassium; magnesium; manganese; and about 8 percent protein. It's also very rich in fiber and pectin, and low in sodium. One tablespoon of carob powder contains two grams of fiber and one cup contains about 40 grams. Pectin helps to eliminate toxins from the body.
    • Carob does not contain theobromine, caffeine, phenylethylamine or fromamide, stimulants in commercial chocolate that can cause migraines and allergic reactions in some people and are toxic to dogs and cats. It also does not contain oxalic acid, which hinders absorption of calcium and zinc.Carob has a natural, mild, sweet taste of its own, so it doesn't need much sugar to sweeten it. For those who don't like chocolate or are allergic or sensitive to it, carob powder is a great substitute for cocoa powder in any recipe.

    Healthy Cookie Dough Ice Cream!


    Happy Friday! 

    Any exciting plans for the weekend? I am walking for MS tomorrow morning... followed by lunch with friends!

    This weekend is already on to a great start! Partially because I had an amazing dessert today!! And I am so excited to share it with you!!

    Healthy Cookie Dough Ice Cream!!

    Can all of those words even be used in the same sentence?! Yes, you read right...

    And it's healthy! Bananas make up the "ice cream" and cashews, oats, and maple syrup make up the "cookie dough." It's vegan, raw, and gluten free. :)

    When I was a kid.. cookie dough ice cream was one of my favorite ice cream flavors! It reminds me of watching "The Secret World of Alex Mack" with my sister. We would eat ice cream almost every night... followed by saltine crackers. Pretty weird, right?

    Actually, from what I've learned at Integrative Nutrition... we were naturally trying to create balance! It all makes sense years later: wet & sweet= craving for dry & salty.

    Anyways.. on to the recipe!


    Ice Cream:
    Ingredients:
    • 3 frozen bananas (I freeze my bananas in halves... makes for easier blending.)
    • 1 teaspoon vanilla extract
    Directions:

    Puree bananas and vanilla in food processor. If "ice cream" isn't blending well, add about 1 tablespoon water or almond milk.

    Cookie Dough:
     Ingredients:
    • 1 cup cashews
    • 1/2 cup oats
    • 1/2 teaspoon vanilla
    • 1 tablespoon + 1 teaspoon maple syrup (or agave)
    • 1 tablespoon water (or almond milk)
    Directions:

    Process cashews and oats in a food processor. Add in vanilla, maple syrup, and water (or almond milk.) Place a sheet of parchment paper on a large plate. Scoop cookie dough onto parchment paper and flatten out with a spoon (or your *clean* hand). Place a second sheet of parchment paper on top of the cookie dough, making sure cookie dough is pressed flat and even. Freeze for at least 30 minutes. (I left mine in overnight.) After it is frozen, cut into "cookie dough chunks"... whatever size you want! Makes about 2 servings.

    *Tip: If you have extra "ice cream," freeze in an ice cube tray!

    Marinated Zucchini "Pasta" Salad

    Greetings! I hope you are having a wonderful start to the week!

    Last week on my birthday, my mom and I ventured to Santa Monica for hot yoga, followed by a delightful lunch at Planet Raw!

    We had the most amazing dishes! My mom ordered the "Avo Sandwich" (avocado, lettuce, tomato, & caramel onions w/ honey mustard dresing on flax)...and I had the Green Curry Pasta (zucchini pasta mixed w/ thai nut curry cream, topped w/ mango noodles).

    Anyways, ever since last Thursday, I cannot stop thinking about how much I want to re-create the Green Curry Pasta dish! I decided it was time to finally order a spiralizer to make the "zucchini noodles." However, to my happy surprise... I received one in the mail! Thank you to my sister, Alyssa (check out her blog "Alyssa's Cooking Adventures" for a perfect birthday present! :)

    So yesterday, I made a version of my sister's Raw Marinated Mushroom & Broccoli Zucchini Pasta to try out the spiralizer! It was so delicious, light, and refreshing! Completely raw, vegan, and yummy! My friend, Jenn, enjoyed it as well!





































    Marinated Zucchini "Pasta" Salad

    Ingredients:
    - 4 zucchinis (mine were small)
    - 1 cup mushrooms, sliced
    - 1 1/2 cups broccoli, chopped
    - 1/2 red bell pepper, sliced
    - 1/2 yellow bell pepper, sliced
    - 1 tbsp agave
    - 1 tbsp olive oil
    - 1 tbsp Bragg's liquid aminos
    - optional: pinch of red pepper flakes (I didn't use)

    Directions:
    Put zucchini through a spiralizer to make noodles (If you don't have a spiralizer, use a vegetable peeler to make "noodles"). Add in mushrooms, broccoli, and bell peppers. Combine agave, olive oil, liquid aminos together, then add to the pasta salad. Mix with (clean!) hands. Sprinkle on red pepper flakes (optional).
