Decadent Chocolate Pudding

Decadent Chocolate Pudding!
















It is completely natural and made from excellent-for-you ingredients! It's also gluten-free, dairy-free, and has 0 grams of refined sugar!

Ingredients:
  • 1/4 cup almond butter
  • 1/4 cup medjool dates, pitted
  • 1/8 cup water
  • 1/4 cup cocoa powder
  • small pinch sea salt
  • 1 medium banana
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla

Directions: Combine ingredients in a food processor and process until smooth.

Lunch Today... Carrot Basil Salad!



















Lunch today was Carrot Basil Salad. It  has become my summer "go-to" recipe when I am short on time and awaiting the arrival of another box of of Abundant Harvest organic produce. :) It's so fun and easy to make...


















Ingredients:
Carrots
Basil (from the backyard!)

Peel the carrots with a veggie peeler.  Garnish with basil... and you're finished!

Usually I will also add sunflower seeds or cashews, for protein. :) 

Oh... and balsamic vinegar makes a delicious quick dressing!!

Loquat Banana Soft Serve



















After realizing how easy it is to make "soft serve," I have not been able to stop daydreaming about the possibilities!

Today I opened the freezer and went for the loquats. :)

I blended a few loquats together with a frozen banana, and it was heavenly!

Seriously... why hadn't I thought of this before? In college, there were frozen yogurt shops all over town... and I visited them frequently. One summer, I pretty much had frozen yogurt every day! Even though I knew it wasn't the healthiest thing to do... I just told myself "It's better than ice cream, right?" But it was still processed dairy with more ingredients than I ever want to know.

Can you imagine a frozen yogurt shop that sold completely healthy, delicious, vegan "frozen yogurt" made out of frozen fruit? And offers an array of yummy toppings? What a way to enjoy your daily servings of fruits!!

Topping were:
-Chocolate sauce
-Unsweetened coconut flakes
-Cacao nibs (100% pure "cacao bean")

Once again, the chocolate sauce is just cocoa powder mixed with agave. :)

Banana Soft Serve!

On the menu today... Banana Soft Serve!

With the temperature being 100+ degrees, I was in desperate need of a frozen treat. I pulled the frozen bananas out of the freezer, and a minute later I had a delicious desert! As I was in a hurry, I modified the recipe... and it was amazing!


















Ingredients:
-1 frozen banana
-1/2 tsp. vanilla

Toppings (optional):
-blueberries
-chocolate sauce (cocoa powder + agave)
-or anything you want! :)

Directions:
Blend the banana and vanilla in a food processor for about a minute, and presto! You have Banana Soft Serve ice cream! :)  It doesn't get any easier than that!
